Another take on the Homemade Ramen Noodles. Another take on the Homemade Ramen Noodles.
Number of Servings: 4


    1/2 extra virgin olive oil

    1/2 bag Mr. Noodles Chinese Style Fresh Pack Noodles

    3 tbsp Chinese Five Spice

    3 cloves garlic

    1/2 acorn squash, sliced

    4 1/2 ginger root, minced

    1 cup bok choy, chopped

    8 medium sized mushrooms

    2 cups kale, chopped

    1/2 Anaheim pepper

    1 bell peppers, sliced

    1/4 cup red onion, diced

    3/4 cup vegetable broth


Heat the olive oil in a large deep skillet on high heat and add onions, garlic and squash. Once the garlic becomes fragrant, add the rest of the vegetables, excluding the kale and bok choy.
Cook the vegetables for about 5 minutes then add the vegetable broth and noodles. Add the kale and bok choy and mix everything together.
Turn the heat down low and cover the skillet. Leave for 5 minutes then serve. Best with chopsticks!
