Introduction

Number of Servings: 6

Ingredients

    1.6 lbs beef round for stroganoff (cut into thin strips)
    2 cups sliced baby portabella mushrooms
    1/2 medium onion
    1 clove garlic (more if you like!)
    1 cup reduced fat sour cream
    1/4 cup flour
    1 tbs oil
    Salt & pepper to taste
    water

Directions

Place flour and beef in zip lock bag & coat beef. Heat oil in non stick pan, add onion and beef, cook until beef is browned, turning occassionally. Add garlic towards the end of browning. Add water to cover beef, add salt & pepper to taste. Reduce heat cover & simmer 30 minutes (adding more water as needed). I don't add broth to this because the beef, onion and garlic simmering in the water creates a nice broth. I don't have any wine on hand but you can add white or red wine if desired (it is not included in the calorie count) After 30 minutes, add mushrooms & a little more water if needed (be careful with the water at this point, the mushrooms will add liquid), simmer on low for an additional 20-30 minutes. Turn off heat & stir in sour cream. Serve over egg noodles (not counted in the calories). Makes 6 servings.
