Ingredients

1 c Oats
1 c milk (or buttermilk)
1 Tbsp white vinegar (exclude if using buttermilk)
1 c whole wheat flour
1/2 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/4 tsp clove
1/4 tsp ginger
1/4 nutmeg
1/2 tsp salt
1/2 c applesauce
1/2 c maple syrup or agave
1 tsp vanilla extract
1 egg
1/2 c raisins
Directions
Add the milk and vinegar and allow to sit at room temperature for 5 minutes. You can also use buttermilk (but I never seem to have any on hand). Add the oats and allow to stand at room temp for 2 hours.
Place raisins in a small bowl and cover with hot/boiling water. Allow to sit for 10 min to plump.
Preheat oven to 375 and prepare mini muffin pan with either liners or cooking spray.
In a medium bowl, add the flour, baking soda, baking powder, cinnamon, ginger, clove, nutmeg and salt. Whisk to combine.
Add oatmeal mixture to dry ingredients along with applesauce, maple syrup and egg. stir well to combine.
Spoon mixture into muffin cups. Bake for 12-15 minutes. Cool slightly in pan, then transfer to wire rack to cool completely.
