Number of Servings: 20

Ingredients

    6 ounces torn whole wheat bread, about 4 to 5 cups
    3/4 cup creamy peanut butter
    1.5 cups canned evaporated milk, divided
    1.5 cups water
    1 cup Splenda or other sugar substitute
    4 large eggs

Directions

Spray an 11x7-inch baking dish with non-stick spray. Heat oven to 350°. Put torn bread into the baking dish. Beat 1 cup of milk and 1 cup water with the 4 eggs and Splenda; pour over the bread.
In a saucepan, combine peanut butter, the remaining 1/2 cup milk and 1/2 cup water. Heat the mixture over medium heat until peanut butter is melted and mixture is smooth. Blend the peanut butter mixture into the bread mixture.

Bake for 45 to 55 minutes, or until set. Serve with a sugar free chocolate sauce such as Walden Farms. Makes 20 3/4 cup servings.

    I made this for my mother for Mother's Day. She's a bread pudding connoisseur and she LOVED it. We topped it with sugar free carmel sauce and pecans. I'll definately make this again. - 5/7/11
