Introduction

I got this recipe from Bob Harper from the biggest loser ans tweaked it a little bit to add the peppers. Just made it for myself and it is fantastic. Try it you won't be disappointed. Ingredients

    1 cup quinoa
    1 cup black beans
    3 medium tomotoes chopped
    1/2 cup salsa
    1 cup chopped peppers

Directions

Prepare quinoa according to directions, then combine all the ingredients and chill. Keeps in fridge for a couple days. I divide mine up into 1 cup containers for easy access on the run.
