Ingredients

    * Beets, boiled, 645 grams
    * *Cheese - PC Goat's Milk Feta, 175 gram(s)
    * Parsley, 35 grams
    * Olive Oil, .4 cup
    * balsamic vinegar, 6 tablespoon
    * Salt, 2 tbsp
    * Pepper, black, 2 tbsp

Directions

Wrap Beets in silver foil and bake for approx 1 hour, or until desired tenderness. While they are cooking, prep your goat cheese, mine comes already crumbled so no prep needed. Dice your Parsley, and measure out the liquids. When the beets are done, cool them down and remove the silver foil. They should peel really easily. Then cut them up into bit size pieces, add all the other ingredients, mix and chill. With large beets, the size of baseballs or bigger( measure them out as per what I have) and you should be able to get 8 small portions out of this delicious meal.
