Ingredients

    1 Egg
    3/4 cup Milk
    1/3 cup Cooking Oil (calc. using Canola)
    1 3/4 cups all-purpose Flour
    1/4 cup Sugar
    2 1/2 tsp Baking Powder
    3/4 tsp Salt

Directions

Grease 12 muffin cups, or line with paper cups. In a small mixing bowl slightly beat egg with fork; beat in milk and cooking oil. Set aside. In large mixing bowl stir together the flour, sugar, baking powder, and salt. Make a well in the center. Add egg mixture all at once. Stir just till moistened (batter should be lumpy). Spoon into prepared muffin cups, filling each about 2/3 full. Bake in 400-degree oven for 20-25 minutes. Remove from pan; serve warm.
