Ingredients

    2 tsp chili powder
    1 tsp ground cumin
    1 tsp minced garlic
    1/2 tsp oregano leaves
    1/2 tsp crushed red pepper (optional)
    1lb ground turkey
    1/2 cup chopped onion
    2 8oz cans tomato sauce
    1 15oz can black beans
    1 12oz bag frozen sweet corn
    1 4oz can diced green chiles
    10 6" corn tortillas
    2 cups shredded cheddar cheese

Directions

brown turkey and onion in large skillet on med-high heat; drain
add tomato sauce, beans, corn and green chiles; mix well
stir in all spices except red pepper.
bring to boil
reduce heat to low; simmer 5 min
add red pepper to taste

spread 1/2 cup turkey mixture on bottom of 13"x9"x2" backing dish sprayed with no-stick cooking spray
top with 5 tortillas, overlapping as needed
layer with 1/2 of the remaining turkey mixture and 1/2 of the cheese
repeat with remaining tortillas, turkey mixture and cheese.

    Very Good
    This is easy and tasty. My wife loves it. I used the Morningstar Farms "ground beef" meal starters instead. My wife didn't know the difference. It's only 80 cal. per serving, too. I am sure it's excellent with turkey, too. - 6/11/11
