Introduction
This is my favorite way to use up extra tomatoes and cucumbers from my garden before they go bad. Eat as a side dish or stuff into a whole wheat pita with chicken or turkey for a quick healthy meal. Ingredients

2 Large cucumbers, peeled and chopped
6 Roma tomatoes, seeded and chopped
1 Tablespoon Lime Juice
1 Tablespoon extra virgin olive oil
1 Medium slice of onion
1/2 teaspoon salt
1/2 teaspoon pepper
Directions
Peel and chop cucumbers and place in a bowl. Halve the tomatoes and use a spoon to remove the inner seeds/ flesh. Chop the tomatoes and add to the bowl. Add one slice of onion, lime juice, olive oil, salt and pepper and toss ingredients together. Cover dish and let the veggies marinate in the fridge for at least an hour before serving. Enjoy!
