Ingredients

    Dressing
    1/3 c rice wine vinegar
    3/4 c thick teriyaki sauce
    2 tbs toasted sesame oil
    2 tbs fresh lemon juice
    2 tbs toasted sesame seeds
    1 tbs honey or sugar
    2 cloves garlic finely chopped
    Salad
    1 small head savoy or chinese cabbage, finely chopped
    2 celery stalks sliced
    4 scallions, finely sliced
    2 carrots, peeled and julienned
    1/2 c whole unsalted cashews
    1 (8oz) can sliced water chestnuts drained
    1 1/2 c fresh cliantro leaves
    4 oz dried rice noodles
    3/4 dried crispy rice noodles

Directions


Whisk dressing ingredients in a bowl. Cover and refrigerate. Mix salad ingredients except noodles
in a bowl; toss with dressing. Boil dried rice noddles until al dente, about 4 minutes;
drain. Arrange salad on 6 plates. Place cooked noodles around salad.
