Quick and Easy Black bean and Corn salad/relish Quick and Easy Black bean and Corn salad/relish
Number of Servings: 10

Ingredients

    1 can black beans-rinsed
    1 can sweet corn-rinsed
    hot sauce
    canned jalapenos- to taste, I used 5 rings
    1 medium onion, or about half cup chopped
    2 tbsp olive oil
    1 tsp garlic salt
    .5 tablespoon black pepper
    1 red bell pepper chopped
    sriracha hot sauce if available otherwise substitute some cayenne pepper or add more jalapeno for heat

Directions

Chop up onions and red peppers and jalapenos. Dump into a mixing bowl with rest of ingredients. Mix well. Best when served cold, but can serve right away. A great meal in itself, or can be used as a dip- or a side dish.
