Introduction

This is great for taking on a camping trip where you have access to a coleman stove. Make it ahead, then carry in a big pot. Heat and serve. Yummy!

Ingredients

    Onions, raw, 1 medium (2-1/2" dia) (remove)
    Garlic, 3 cloves (remove)
    Carrots, raw, 1.5 cup, grated (remove)
    Yellow Peppers (bell peppers), 1 pepper, large (3-3/4" long, 3" dia) (remove)
    Red Ripe Tomatoes, 3 medium whole (2-3/5" dia) (remove)
    *Red Gold Diced Tomatoes, 3.5 cup (remove)
    *Beans Bush's black beans, 1.5 cup (remove)
    *Bush's Golden Hominy, 1.5 cup (remove)
    generic canned corn, 3.5 serving (remove)
    *Tyson Grilled & Ready Fully Cooked Fajita Chicken Breast Strips Serving Size 3 oz, 4 serving (remove)
    *Swanson Chicken Broth - 99% Fat Free, 4 cup (remove)
    brown rice, .66 cup (remove)
    red lentils, .66 cup

Directions

Chop all the veggies and put them in the pot. Stir while heating on medium. (I did not add oil on purpose, but you can if you like.) Add broth, tomatoes, beans, corn, hominy and spices. Add rice and lentils and 6 c water.
Add in the following spices to taste: smoked hungarian paprika, chili powder, cumin, and I use Penzey's tuscan Sunset, and Arizona Dreaming also.
Simmer for about 2 hours. Stir occasionally.
Serve with sour cream, shredded cheese, cilantro, and chips,
