Introduction

A light alternative to a burrito. I used baked sweet potatoes, a can of corn, and a can of black beans, on yellow corn tortillas to make this tasty and easy dinner. A light alternative to a burrito. Ingredients

    2 medium sweet potatoes
    1 can corn
    1 can black beans
    chopped cilantro and seasonings to taste
    cheese if desired
    pico de gallo

Directions

Bake the sweet potatoes. Once cooled mash the sweet potatoes. Add a can of corn, a can of black beans, seasonings to taste to the mashed potatoes. Cilantro, pico de gallo, and cheese make great toppers, but none are included in the recipe.
I filled each medium corn tortilla with a half a cup of the mixture and had about 10 burritos.
