Ingredients

    1 Can of Reduced Fat Coconut Milk
    2 Pounds Lean Stew Beef
    4 Cups of Water
    2 Cups Yucca, raw, cubed
    2 Plantains, sliced thick
    4 Bay Leaves
    1 TBSP Annatto
    1 TSP Ground Cumin
    1 TSP Oregano
    1 TSP Ground Coriander
    1 TBSP Sea Salt
    1 TSP Black Pepper
    1 TSP Garlic Powder
    3 TBSP Cilantro, raw, chopped
    1/4 Cup Lime Juice

Directions

Makes roughly 8 2-cup servings.

Simply mix all ingredients in a crock pot, and cook on high for 4 hours. Remove Bay Leaves prior to serving.
