Ingredients

1 chicken tender, cut into strips
1/4 cup each: carrots, sliced; bell pepper, sliced, green onion, sliced; green beans, sliced into pieces; snap peas, sliced
1/2 cup each: broccoli florets and cauliflower florets
    1/4 t. ground ginger
    1/4 t. black pepper
1 T. Sun Luck Hoisin Sauce

Directions

Season sliced chicken with pepper and ginger. In large stainless steel skillet sprayed with Pam cooking spray, cook chicken slices until no longer pink and juices run clear. Set aside. In same pan, add vegetables and cook until crisp-tender. Add chicken and hoisin sauce. Stir to coat. Cook until hot. If pan has browned bits, use water to deglaze pan and reduce liquid until slightly thick. Pour sauce over chicken and vegetables. Serve over rice with cooked pasta or with whole wheat tortilla.
