Ingredients

    1 Tbsp. Canola Oil
    0.5 c. onions, chopped
    4 cloves Garlic, chopped
    1 bell pepper, any color, chopped
    4 c. Vegetable Broth
    1 Tbsp. Poultry seasoning (or to taste)--may also use sage and/or Italian seasoning
    1 tsp. Cayenne Pepper (or to taste)
    1.25 c. (1/2 package) uncooked Trader Joe's Harvest Grains Blend
    1 c. Dried Lentils, Green or Brown
    1 c. Red Quinoa
    0.5 c. frozen peas

Directions

Heat oil in saucepan and add onion, garlic, and bell pepper. Stir in the broth, Harvest Grains, Blend, lentils, and quinoa saucepan. Stir well and bring to a boil. Reduce to a simmer and cover. Cook for 30 minutes or until desired tenderness, stirring occasionally. May need to add more water as needed during cooking. Stir in frozen peas and allow to heat through, about 5 minutes.

Serve hot or cold; freezes well. Makes 10 generous meal-sized servings.
