Ingredients

    1 large head of Cauliflower about 8 cups
    1 large Portobello Mushroom, diced
    9 Boneless Pork Loin Chops, about 3/4 in, thick
    1 26oz can of fat free Cream of Mushroom soup
    1 cup of fat free milk( or 1 can evaporated milk)

Directions

Pre heat over to 375 degrees. Place the 8 cups of cauliflower florets in a bowl with the diced mushroom, pre cook in the microwave for 4 min. Drain water. Place veggies in the bottom of an ungreased 9x15 casserole dish, dice and add the mushroom, toss gently. In another bowl mix together the soup and milk pour about 1 cup over the veggies, layer your pork chops over the top and cover with soup mixture. Spread the soup mixture over the chops and into veggies. Bake at 375 degrees for 40 minutes turn over chops and cook for another 40 minutes. If you have the extra fat calories you could add some cheese or french fried onions to the top of this.
