Introduction
I absolutely love the flavor of pizza sauce and cheese but regular pizza just isn't that great for you in most instances. I made these to get that yummy flavor...it's almost like an eggplant parmesan, except individual slices of eggplant. Ingredients

1 large eggplant (1-2 lb.)
0.25 Ragu Pizza Quick Sauce, Traditional (or you can use whatever kind you like, just look at the nutritional value)
2 oz. Mozzarella cheese, part-skim (or fat-free)
0.15 Flour (just enough to lightly cover the eggplant)
Seasonings of your choice
Directions
Makes approxmiately 20 1/2 cm. pieces
Slice eggplant into very thin, rough pieces.
Eggplant has alot of moisture, so I do not use an egg mixture.
Lightly coat the eggplant in the flour and seasonings
Place on a baking sheet
Bake the eggplant until it starts to get crispy on the top, then flip over. Bake until egg plant is crisp through.
Add pizza sauce and mozzarella cheese to one side of the eggplant. Bake until sauce is warm and cheese is melted.
