Directions
1 large head cauliflower
2 cloves garlic, minced or crushed
3 tablespoons extra virgin olive oil
1 teaspoon kosher salt
1 teaspoon white pepper
1/2 cup shredded fresh parmesan
1 tablespoon parsley
Makes about 6 1-cup servings
Preheat the oven to 450 degrees F.
Grease a large casserole dish.
Separate cauliflower into florets; place in a large mixing bowl.
Pour olive oil and garlic over cauliflower; mix to coat cauliflower with oil.
Pour into the prepared casserole dish; season with salt and pepper.
Roast for 25 minutes, stirring halfway through.
Top with Parmesan cheese and parsley; broil for 3 to 5 minutes until golden brown.
