Ingredients

    1 cup dried black beans
    4 cups water
    1/4 tsp cumin
    1/8 tsp cayenne pepper
    1/2 tsp paprika
    1/2 sweet onion, diced or chopped
    1 - 3 cloves garlic, minced
    1/2 tsp mustard powder
    1 tsp chili powder
    3 vine ripened tomatoes, sliced
    2 Tbsp tomato paste
    1 red bell pepper, chopped
    1/4 - 1 tsp salt (depending on taste)
    shredded cheese (not included in nutrition info)
    rice

Directions

Soak beans in water overnight. Drain and discard water; rinse beans. Place beans and 4 cups water in the slow cooker and cook on high for 6 hours, or until tender. Sautee onion, garlic, and spices until fragrant, then add to slow cooker. Add tomato, pepper, salt, and tomato paste. Set cooker on low and cook for an additional 3 to 4 hours. Serve over rice or corn bread/muffins with a few ounces of sharp cheddar cheese.
