Introduction

This dish can be served hot or cold. It is a terrific side dish, or it can serve as the main dish for Vegetarian or Vegan diets. I especially like it served with Stuffed Portobella Mushrooms. Ingredients

    12 oz can Black Beans, rinsed
    1 Plum Tomato, diced
    2 tbsp White Onion, diced
    1 tbsp Extra Virgin Olive Oil
    1 tsp lemon juice
    1 tsp oregano
    1/2 tsp black pepper (or to taste)

Directions

Rinse black beans. Chop tomato and onion. Add olive oil, lemon juice and Oregano, and Black Pepper. If you use canned beans, you do not have to add salt. Toss all ingredients together. Serve cold or hot.

Makes 2 to 3 servings.
