    Whole chicken - cut into 12 pcs
    Garlic - 4 cloves
    Ginger - 4 of 1" slices
    Onion, chopped - 1 medium sized
    Salt+pepper - 1 dash each on every chicken piece
    Sesame oil - 2 tbsp
    Oyster sauce - 2 tbsp
    Dark soy sauce - 1 tbsp
    Sunflower oil - 2 tbsp


Wash and rub salt and pepper into chicken
Boil garlic, ginger and onion in a pot of water (enough to cover chicken in)
Add chicken when water starts boiling
Switch off heat when broth starts to simmer again, approx 10-15 mins
Remove chicken and condiments (garlic, ginger and onion) from stock, use stock for chicken rice
Marinate chicken with sesame oil, oyster sauce and soy sauce
Saute condiments (garlic, ginger and onion) with sunflower oil, add chicken and stir fry until skin is slightly caramelized.
