Introduction
This is a great recipe to make at the beginning of the week. Divide it up into 6 servings and you have lunch for the entire week. Ingredients

1# Ground Buffalo or Bison
2 Tbs Exra Virgin Olive Oil
1/2 Onion Diced
5 small or 3 large Cloves of Garlic Chopped
1 Red or Green Jalapeno Pepper, Seeded and Diced
1 14oz can Quality Diced Tomatoes
3 Tbs Chili Powder
1 Tbs Ground Cumin Seed
2 tsp Dried Oregano
2 tsp Smoked Paprika
8 oz Water
2 Tbs Cider Vinegar
Kosher Salt and Cracked Black Pepper
Fresh Chopped Cilantro
Tobasco Sauce
Directions
On Med-High heat, preheat a 12-14” skillet. Add 1 Tbs Olive oil, sear off meat until browned and cooked, drain off excess fat through a sieve; wipe pan clean and add remaining 1 Tbs Olive Oil. Saute onion until softened, add garlic and Jalapenos , saute stirring often. Deglaze with a splash of water and add contents to a 2 Qt pot on medium heat.
Add meat to onion mix and add seasonings, tomatoes, water, vinegar. Turn up heat to low boil, stirring often.
Reduce heat to simmer and cook for 15 minutes until sauce has reduced and thickened a bit. Add Tobasco and Cilantro to liking.
Serve over Steamed Cauliflower. (Cauliflower calories not accounted for in this recipe.)
