Ingredients

    1 tsp olive oil
    2 tbs chicken broth
    2 garlic cloves, minced
    1.5 c. diced red potatoes
    1/2 c chopped celery
    1.25 lbs green beans, trimmed
    1/3 c chopped cilantro
    3/4 lbs plum tomatoes, pealed and coarsely chopped
    1/4 tsp freshly ground black pepper
    1/4 tsp ground red pepper

Directions

Heat oil in large skillet; saute garlic 30 sec; add potatoes, celery, and beans; saute one minute. Add 1/4 c. water, cover and cook medium high for 5 min. Add tomatoes; cover and reduce heat to low; cook for 4 minutes. Stir in 1/4 tsp ea. freshly ground black and red pepper. Salt to taste.
