Introduction

Ingredients

    For the chicken:
    1 chicken breast
    1 handful of spinach
    1tbsp cooked couscous
    1tbsp ricotta cheese
    3 slices of prosciutto ham / any thin cured ham
    1tsp curry powder

    For the mashed potatoes:
    1 medium - large potato
    1 tsp butter / margerine / olive oil
    100ml milk

Directions

Pre-heat oven to 220 degrees C

Combine the couscous, ricotta, spinach and curry powder.

Cut the chicken breast down the middle to create a pocket and stuff with the spinach mix

Wrap in the cured meat to seal in the stuffing and then brown each side in a hot pan for literally 20-30 seconds each side and transfer the whole pan to the oven (ensuring it is an ovenproof pan) and lower temperature of oven to around 190-200, cook for about 15 minutes. When cooked remove the chicken from the pan to rest and add the honey to the juices over a medium heat, stir until thickened.

Make the mashed potatoes by peeling, chopping and washing your potato and boiling it for about 15minutes, heat the milk, butter and goats cheese and mash in with the potatoes, season to taste

Plate up the potatoes, the chicken and then pour over the honey glaze

    not really, based on a diet of 1900 calories a day and 40-50g of fat, this is a perfectly healthy meal and tasty too, i suppose you consider water a tasty salad dressing though.
