Ingredients

    1 onion, chopped
    1tsp minced garlic
    1/2c chopped red or green bell pepper
    1 1/2 lbs medium shrimp, peeled
    1/3c salsa
    1tsp Worcestershire sauce
    1/2c evaporated milk, nonfat
    3tsp canned diced green chilies
    3c cooked brown rice

Directions

1. In large nonstick skillet coated with cooking spray, saute onion, garlic, pepper, and shrimp over medium heat about 5-10 minutes, until veggies are tender.

2. Add salsa, worcestershire sauce, milk, and chilies. Stir in cheese and rice and cook until cheese is melted and well combined, about 5 minutes.

3. Serve and enjoy!
