Ingredients

    6 c. brown rice flour
    1 c. sorghum flour
    1/2 c. flaxmeal
    3 flax eggs (3 Tbsp flaxmeal +9 Tbsp hot water, let sit 10 min before adding)
    4 1/2 tsp. yeast
    3 tsp. kosher salt
    2 tsp. baking powder
    3 tsp. xanthan gum
    1/4 c. honey
    6 Tblsp canola oil
    2 tsp. vinegar
    4 c. warm water

Directions

Make flax egg goo and set aside. Whisk all dry ingredients together in large bowl of a mixer. Add wet ingredients and mix on medium-high for 5 minutes. Divide into 2 greased 9x5-inch loaf pans. Raise in a warm spot for about 15 minutes, until just above top of pan. Bake in a pre-heated 375 degree oven for 65 minutes. Remove from pans and cool on rack.

Makes about 16 slices (servings) per loaf
