Ingredients
-
Spinach, onion, cabbage, tomatoes, egg, sour cream, black beans, corn, & swordfish.
Directions
Prepare the swordfish with salt and pepper and bake until done. While the fish is baking, scramble the egg whites in a non-stick pan. Place the egg on a bed of spinach. saute the onions, cabbage, soy sauce, balsamic vinegar, and hot sauce until desired consistancy is reached (I prefer the presence of a slight crispness) and place atop the egg whites. Once the fish is thoroughly cooked allow to cool and place atop all the other ingredients. Mix the salsa and sour cream thoroughly and spread liberally over the salad.
