Number of Servings: 8

Ingredients

    1 TBSP olive oil
    1 medium onion
    4 cloves garlic
    12 oz. canned chicken breast, drained
    1 tsp cumin, 1 tsp chili powder
    15 oz. can pumpkin
    15 oz. can diced tomatoes
    8 oz. can chilies
    1 cup frozen corn, heaping
    1 small jar salsa
    14 oz. can chicken broth
    14 oz. can coconut milk
    Sea salt and fresh ground pepper
    15 oz. can black beans, drained
    Lime, optional
    1 tsp. dry sherry, optional

Directions

1. Sauté garlic and onion in olive oil in large saucepan.
2. Add all other ingredients, except for the lime.
3. Just prior to serving add fresh lime to brighten the flavor.

Each serving is approximately 2 cups. Serves 8.
