Introduction

Great filling sandwich that can easily be made the night before and assembled at work. Great filling sandwich that can easily be made the night before and assembled at work.
Number of Servings: 5

Ingredients

    1/4 c light mayonnaise
    2 1/2 tbsp fat free plain yogurt
    2 1/2 tbsp pesto
    3/4 tbsp lemon juice
    1/4 tsp salt
    1/4 tsp pepper
    12 oz chicken breast, cooked
    1/2 c diced celery
    2 1/2 tbsp chopped walnuts, toasted
    5 whole wheat pocket pitas, Basson
    6 oz bottled roasted red bell peppers, drained and chopped
    5 romain lettuce leaves

Directions

Combine the first 6 ingredients witha whisk. Stir in the cubed chicken, celery and walnuts. Cut pitas in half and fill each half with 1/4 cup chicken mixture, 1 tbsp bell pepper and the romaine.
Makes 10 pita halves (nutritional info is for 2 halves per person)
