Number of Servings: 8

Ingredients

    20 oz package ground turkey 93% lean
    1/2 large head of cabbage (approx 2.5-3lb head)
    1 can black beans
    3 cans diced tomatoes
    Spices to taste: cumin, chili powder, garlic, Frank's Red Hot sauce, fresh or dried cilantro
    Optional: onions. I didn't use them but they would be good.

Directions

Brown turkey in large saucepan or pot, chop with spatula to crumble while cooking, start adding spices during cooking to infuse them into the meat. Chop cabbage while meat is browning. Put cabbage and tomatoes in pan, mix thoroughly. Drain and rinse beans, then add them. Heat through while stirring, adding spices to taste. Turn heat down, cover and simmer to cook cabbage to your liking and let spices mingle. If using fresh cilantro, add just before serving.

Serve over brown rice. Optional: add a dollop of lowfat sour cream and lowfat shredded cheese.

Can also be made with TVP instead of meat but the fiber content will be a little out of control.
