Directions
Preheat oven to 350.
Wash and break up cauliflower into bite size florets. Pre steam for about 10 minutes to shorten cooking time.
Chop celery and onions - the finer the better.
Saute garlic (I used the garlic that is prechopped), onions and celery in olive oil until onions and celery are soft but not too squishy. Add the almonds a few minutes before finishing the saute.
While sauteeing, crush cornflakes and mix with 1 tablespoon of the butter and shred cheese, set aside.
Use remaining butter to lightly grease a baking dish. I like to use a bigger shallower baking dish so most of the top is crunchy but an 8x8 or 9x9 works fine.
Put Cauliflower and saute mix into baking dish. I usually mix it a little in the dish but you can just spoon the saute on top if you wish. Top with shredded cheddar cheese and finish with the corn flake topping. Bake for 30-40 minutes until golden brown.
Optional: Add garlic salt or parmesan to the corn flake topping for an extra taste.
Use reduced fat cheddar or none at all to cut down on calories.
