Quinoa 1c. dry
Cashews 1/2c. halved or coarsely chopped
Dried Cranberries 1/4c.
Sunflower Oil 2 tbsp.
Parsley 2 tbsp. minced
Mint 2 tbsp. minced
Directions
Cook Quinoa according to instruction
Let cool for 5-10 minutes and then fluff with fork
Add all remaining ingredients.
Add salt to taste (doesn't need much).
Refrigerate
