Introduction
This warming and hearty soup is usually made with pork, but in order to lighten it up, use the chicken meat from a supermarket ready-roasted chicken. Add a couple cans of hominy and some jarred salsa and that's it! Ingredients

2 smallish medium onions, chopped
2 T olive oil
.5 large jar prepared salsa (choose according to taste)
4 cups chicken broth
meat from pre-roasted chicken, bones and skin removed
2 15oz. cans whole hominy, rinsed and drained
Directions
Heat the oil in a large saucepan over high heat until hot. Reduce the heat to medium, add the onion, and cook, stirring occasionally, until softened - about 5 minutes. Add the salsa and cook, stirring, for 5 minutes.
Add the chicken broth and simmer, partially covered for 10 minutes. Add the chicken meat and hominy, cover pot, and simmer until heated through, approx. 15 minutes. If stew becomes too thick, add more broth until desired consistency is achieved. Add salt and black pepper to taste.
Makes 4 - 6 1-cup servings.
