Quick to make, filling to eat Quick to make, filling to eat

Ingredients

    2 large frozen bags of corn
    1 large onion
    2 large potatoes
    1 red bell pepper
    3 c chicken broth
    1-2 T butter
    1-2 T olive oil

Directions

Saute onion in butter & oil. Add 1 bag of corn, potatoes, bell pepper, and 1 cup of broth. Cook, then purse with a mixing stick. Add 1 bag of corn and 2 cups of broth. Season to taste. May serve immediately or give it time to simmer.
