Introduction

This is a recipe is my version of a corn/black bean salad my aunt served at a family reunion a few years ago. It screams freshness. I use 1 can of corn/beans and diced tomatoes for convenience sake...but you can use fresh by all means! Either way...it's delish as a side dish, a filling for a soft taco or as a dip to use with corn chips. Ingredients

    1 can of black beans rinsed
    1 can of corn rinsed
    1 can of diced tomato rinsed
    1 jalapeno seeded and diced
    1 avocado diced
    1/2 sweet onion diced
    1/4 cup olive oil
    Cilantro snipped to taste
    Salt to taste
    Pepper to taste
    Cumin to taste
    Garlic to taste
    Fresh Lime

Directions

Throw beans, corn, toms, jalapeno, avocado and sweet onion in a bowl. Pour olive oil and give it a stir. Snip a generous amount of cilantro if you like cilantro...if you don't leave it out or add just add a small amount. Stir and taste. Add salt, pepper, garlic and cumin to taste. Squeeze fresh lime over all and give it a good stir. Refrigerate for a couple of hours until chilled and flavors have melded.
Makes 11 1/2 cup servings.
