Add your own toppings halfway through baking.

Number of Servings: 8

Ingredients

    1 cup warm water
    1 package dry, active yeast
    1 TBSP sugar
    2 TBSP olive oil
    1 tsp each: basil, oregano, rosemary, and crushed red pepper
    1/2 TBSP apple cider vinegar
    1 tsp salt
    1 tsp xanthan gum
    2.5 cups gluten-free flour
    1 TBSP olive oil for pan
    1/8 cup cornmeal for pan

Directions

Proof water, yeast and sugar.
Whisk together 2 TBSP olive oil, herbs, vinegar, salt and xanthan.
Whisk in yeast mixture.
Add flour.
Mix by hand for 3 minutes. Leave to rest while you oil the pan and sprinkle cornmeal.
With oily or wet hands, spread dough out on cookie sheet. It should come close to the edges.
Let it rest in a warm place while you preheat oven to 425 F.
Prebake 10 minutes.
Add sauce and toppings. (Not included in this recipe!)
Bake another 10 minutes or until toppings are bubbly.
Cut into 8 pieces.

Serving Size: Makes 8 squares.
