Introduction

I like to clean my fridge once a week (usually Monday because Tuesday is grocery day) and make a soup to use up leftovers and veggies. I like to clean my fridge once a week (usually Monday because Tuesday is grocery day) and make a soup to use up leftovers and veggies.

Ingredients

    1 tbsp olive oil
    2 carrots chopped
    2 stalks celery chopped
    2 cloves garlic chopped
    1 cup broccoli
    1 cup edamane
    1/2 tsp salt
    3 cups vegetable stock
    1 large can tomatoes
    1 cup cabbage
    1/2 tsp basil
    1 cup cooked whole wheat spaghetti
    2 cups raw spinach

Directions

Saute celery, garlic, carrot, and broccoli in olive oil for a few minutes. Add all other ingredients except for spaghetti and spinach and simmer until veggies are tender. Add spaghetti, cook 5 minutes. Remove from heat and stir in spinach.

Serving Size: makes 5 1 cup servings
