Ingredients

    1 1/4 cup mashed ripe avocado
    1/4 cup pure fresh squeezed lime juice
    1/2 cup extra virgin olive oil
    1/3 cup cider vinegar
    1/2 cup filtered tap water
    1/3 cup finely chopped onions
    .1 ounces garlic
    1 Tablespoon raw honey
    1/4 teaspoon each sea salt, and black pepper

Directions

Mash avocado. Add remaining ingredients into blender and blend until creamy. Refrigerate.
Makes 10 1/4 cup servings

    Was just wondering how long this dressing would be good for after you make it - 4/15/10

    This dressing kept very well in the fridge for two weeks. That's when I finished it.
    I think the other ingredients help to preserve the avocado.
