Ingredients

1 small head cauliflower
6 cloves roated garlic, peeled
2 ounces Parmesan Cheese
3 tablespoons butter, softened
2 teaspoons parsley flakes
salt and pepper to taste
Directions
1. Chop cauliflower into large florets, only disposing of the toughest stalks; boil for 6 minutes, until very soft.
2. Drain cauliflower extremely well and place in Mater Prep Pro Pitcher while still hot. Add remaining ingredients and secure the pitcher's top.
3. Pulse for 10-15 seconds, until cauliflower is creamy and nearly smooth.
4.Salt and pepper to taste and serve immediately. If the smash has cooled, transfer to a microwave safe dish and microwave for 1 minute to reheat.
* To roast garlic: preheat the oven to 400 degrees and line a baking sheet with foil. Lay garlic cloves out in a single layer and cover with another sheet of aluminum foil. Bake for 15-20 minutes until cloves turn a golden brown.
