I love stuffing chicken breasts with all sorts of delicious ingredients. This is just a sample of what you can stuff with and how you can serve it. So delicious and so low fat, low calorie and low carbs! Feel free to swap out the type of cheese, the veggies inside, etc. Have fun with this! Ingredients

    3 boneless skinless chicken breasts
    1 small shallot diced
    1/4 small red onion diced
    1 clove garlic diced
    1 small red pepper diced
    1 tbsp chives
    1/2 cup lowfat cottage cheese
    1/3 cup part skim mozzarella shredded
    1 tbsp parmesan grated
    2 cups fresh spinach
    1-2 tbsp olive oil
    salt and pepper

Directions

Cut chicken breasts in half, then butterfly if they are thick. Pound to about 1/4-1/2 in thick. Salt and pepper.
Cook in small amount of olive oil:
chopped red peppers, red onion, small shallot, and garlic. Let cool.
In a bowl, mix cottage cheese, parmesan, mozzerella and salt and pepper. Add the pepper mixture and the chopped chives to this when it has cooled. Mix.
Spoon about 1/6 of the mixture on each flattened breast. Roll up and secure with toothpicks. PLace in baking dish that has been lightly greased with olive oil.
Bake at 400 degrees for about 20 minutes or until chicken is cooked through.
Serve over bed of fresh spinach. THe spinach should wilt slightly.

You can add a fresh tomato sauce to the top of this, or another type of sauce to your liking.

Serving Size: Makes 6 small servings (half breast) - can put two together for an adult serving.
