Introduction
Yummy and as I use bison it is low fat for meatloaf! Beans add fiber and flavor. Zucchini and yam punch up the vegetables and your spouse or kids won't notice! Ingredients

1 lb ground bison or other ground lean meat
12 oz black beans cooked and drained
1 cup zucchini grated
1/2 cup seasoned croutons
1 cup yam grated
1 egg
salt
pepper
!/4 cup ketchup
3 tsp. brown sugar
!/2 tsp dry or Keen's mustard
Directions
Mix meat, beans, vegetables, croutons and egg. Season with salt and pepper(go easy as there is salt in the croutons!)
Pat into an oiled meatloaf pan and bake uncovered for 30 minutes at 350degrees F. Mix the ketchup, brown sugar and dry mustard and spread on meatloaf. Return to oven and finish cooking.
Serving Size: serves 6 large servings
