Ingredients

1 bunch spinach - washed and dried
2 Tbsp extra virgin olive oil
Italian spices (1-3 Tbsp dependent on taste)
dash salt
pepper to taste
1 portabella, washed and sliced into thin pieces
1/4 c sliced red onion
2-3 ( used 2.5 for this recipe- cos thats what I had) pieces of bacon cooked (I trim fat off)
1 large Pizza crust (see my recipe)
1/4 pizza sauce or I use my homemade pasta sauce- yes it makes a difference!
Directions
In a plastic bag, toss spinach with olive oil.
Precook bacon and blot off grease (I trim all fat off)
I like to put my onion and mushrooms in microwave and steam for 2 mins, so they are precooked (optional).
Preheat oven to 425, roll out pizza dough. Top with sauce - top with shredded cheese, (1/2 of a large block) , add spinach, sprinkle Italian Spices, salt and pepper. Add mushrooms, onions and bacon. Bake on pizza stone, on middle rack for16- 22 min. Serve & enjoy!
