    1 Medium Onion chopped
    2 Garlic Cloves crushed
    1 tsp coconut oil
    2 cans of diced tomatoes
    1 cup of broth (your choice, I use organic beef broth)
    1 tsp olive oil
    1/2 Tbsp dried basil (or fresh if you have it)
    salt to taste
    pepper if desired (I leave this out)
    1/2 cup low fat goat's milk (or cow's milk )


Saute onions and garlic in 1 tsp coconut oil until golden brown

Add 2 cans of tomatoes, broth, olive oil and basil (if you're using fresh basil, wait until the last minute to add it), salt and pepper to taste. Bring to a boil and simmer for 5 minutes

Blend in a food processor or blender, or use an immersion blender.

Add milk, stir and enjoy.
