Ingredients

4 large (or 8 small) (800g total)white potatoes peeled, chopped boiled
2 large(5") sweet potatoes - peeled, chopped boiled.
1/2 c light sour cream divided into 2
8 oz light cream cheese (can use flavoured like herb or plain) - divided into 2
1/4 tsp salt - divided
1/4 tsp pepper - divided
2 Tbsp Parmesan cheese
1/8 c (2 oz) marble cheese - shredded.
Directions
Mash white potatoes with 1/2 sour cream, 1/2 the salt, 1/2 the pepper and 1/2 cream cheese, mix until smooth - add Parmesan cheese, and milk and mix.
Mash Sweet potatoes with other 1/2 of ingredients and add marble cheese. Mix
In a glass (to make it pretty) pyrex put a layer of white potatoes (use 1/2 of your mixture) then a layer of 1/2 of the sweet potato, the second half of the white, then top with the last 1/2 of the sweet potato.
up until here you can make ahead.
Just before serving - bake at 375 for 15 min.
Optional - (not in nutritional breakdown) add a dusting of parm & cheddar and pop back into oven for 5 min. or add breadcrumb topping with butter and pop back in for a few minutes
