Introduction
This is a traditional Native American Fried Bread recipe with a healthy twist. By substituting apple sauce rather than sugar and olive oil rather than lard they turn out much lighter and fluffier and more heart friendly! Ingredients

3 cups warm water
2 Tbsp Yeast (~two packages)
1 can (15oz) Unsweetened Apple Sauce
1 can (12oz) Evaporated Milk
1 Tbsp (Sea) Salt
4 Tbsp Olive Oil
12 cups (whole bag) all purpose white flour
1/4 cup Yellow Cornmeal
*Oil for frying
Directions
1.) In a large bowl mix three cups of warm water, unsweetened apple sauce, Salt and evaporated milk. stir in two packages (.5 oz) bakers yeast. cover and let sit for 5 minutes until yeast is activated.
2.) Stir in 4 table spoons of Olive oil.
3.) Add flour all at once. Stirling in as much as possible then knead the rest together with your hands.
4.) place a small amount of flour on the counter surface and turn dough out onto it, kneading it until smooth and elastic.
5.) place back in bowl and cover, let rise for 15 minutes in a warm area.
6.) In a large skillet poor oil for cooking, Heat on med-high until hot and ready to fry.
7.) place a small amount of flour and 1/4 cup of cornmeal on the counter. Pinch off a small handful of dough and roll in the flour and corn meal. stretch the dough flat. Place in hot oil until one side is brown, flip and allow to brown on both sides. remove from skillet and place on a towel, or paper towel to cool and remove excess oil.
Serving Size: makes ~28 5 inch pieces,
