Ingredients

3 oz Artichoke Hearts
1 oz Fat Free Feta
3 Large Kalamata Olives
1 tsp Oregano
1 tsp Lemon Juice
Pinch salt
Pinch Pepper
1 pound Thin Pork Cutlets
Directions
Combine all ingredients (Not Pork) in a food processor or blender. Pulse to chop and combine all ingredients together.
How you assemble these is up to you. I had the thin cut pork so I made a sandwich. Lay one pice of pork on a lightly greased pan, top with filling, top with another piece of pork. Continue to make 4 equal pork "sandwiches". If your pork is thicker cuts you can either butterfly and stuff, pound them out thinner and roll, or even make a roulet from a whole pork loin.
Bake at 350 for 30-60 minutes depending on the method choosen.
