Introduction

Similar to Julia Child's potage parmentier, but without cream. Similar to Julia Child's potage parmentier, but without cream.
Number of Servings: 4

Ingredients

    4 leeks
    2 Tbsp olive oil
    1 lb red potatoes
    4 c chicken or veggie stock (not calculated)
    1 bay leaf
    salt & pepper
    parsley (optional)

Directions

Slice up leeks thinly & wash well. Heat up oil in dutch oven; add leeks & saute until golden (10 min). Peel potatoes & cut into 1/2" dice. Add potato, stock, bay leaf & salt & pepper to taste. Boil, then simmer until potatoes are tender (~20-25 min). Remove bay leaf. Lightly mash potatoes. Add parsley if desired.

Serving Size: Makes 4 1.25 cup servings
