Introduction

The recipe below is for grits (dried, ground corn) but could easily be converted into a polenta dish by exchanging 1:1 grits for yellow cornmeal. Cooking time will be slightly longer with cornmeal. Ingredients

    *5 cups of water
    *1-2 vegetable bouillon cubes
    *2 tsp of salt
    *1 tsp black pepper
    *1 tsp of paprika, ground red pepper, or chili powder (depending on your spice preferences)
    *1-2 tsp of garlic powder or crushed garlic, according to your preference
    *1 cup of 2% milk
    *1/2 cup of cheese (I used monterey jack)

Directions

Bring water and spices to a gentle boil. Add milk, stir and bring back to gentle boil. Reduce heat, and slowly stir in grits, whisking enough to keep smooth. Simmer for 10-15 minutes until tender, whisking periodically. Once you turn off the heat, add the cheese and blend. Enjoy!
