Introduction

Sooo Good! I paired it with maple-soy roasted salmon (another of my recipes) & toasted whole wheat sandwich thins (spread with 2 teaspoons smart balance light with flax). It was less than 500 for a complete nutritious meal. Sooo Good! Ingredients

    1 cup baby spinach
    1/2 cup strawberries, sliced
    1 tablespoon pecans, chopped
    1 tablespoon sugar-free strawberries preserves
    1 teaspoon balsamic vinegar
    1/2 tablespoon olive oil

Directions

In a small bowl, whisk strawberry preserves, balsamic vinegar and olive oil. Mixture will be thick. Let sit 5 minutes. Place spinach on a plate. Sprinkle with pecans. Layer strawberries on top. Spoon "dressing" over the top and enjoy.
